I love this salad by Nigella Lawson. This is originally made for cold egg noodles, but I decided to healthify it a bit by making it with quinoa. Just cook the quinoa to package instructions and follow with Nigella’s recipe.
Sesame Peanut Noodles (or quinoa) – Recipe by Nigella Lawson
Ingredients:
Dressing:
- 1 T sesame oil
- 1 T garlic oil (or 1 clove garlic, 1 T olive oil)
- 1 T soy sauce
- 2 T sweet chili sauce
- 1/3 c peanut butter
- 2 T lime juice
Salad:
- 1 1/4 lb egg noodles (or 2c quinoa)
- 2 green onions – chopped
- As much veg as you like – I used radishes, carrots, spinach and cilantro.
- 1 T sesame seeds
Directions:
- Cook quinoa to package instructions.
- Add all of the dressing ingredients in a small bowl (I like to use a Pyrex measuring cup for easy-pour action), stir, and set aside.
- Next prep you veggies and add to a large bowl for mixing.
- Once the quinoa is done add to the veg bowl with the dressing and toss.
- Can be served at any temperature.
